When peeling zucchini, cucumbers, summer squashes, or carrots save the peels in the freezer for a vegetable stock later. Add the tops of peppers, extra cabbage leaves and unused celery stock also. add your own vegetable scrap choices also. Store in air tight freezer bags.

When ready to make take them out of the freezer and add more carrots, onions, celery, herbs and water for tasty homemade vegetable stock. Let simmer on low for an hour or more until desired flavor is reached.

The stock can then be refrigerated or frozen.
