½ cup low -sodium soy sauce
1/3 cup rice vinegar
¼ cup dark brown sugar
2 Tbs. grated ginger
2 cups low-sodium chicken broth
1 ½ pounds boneless, skinless chicken breasts, cut into 1-inch pieces
2 carrots, cut into 1/8-inch rounds
8 ounces Brussels sprouts, thinly sliced for shredded
2 scallion, sliced

Combine the soy sauce, vinegar, sugar, ginger, and chicken broth in a medium saucepan and bring to a boil.
Add the chicken and carrots and simmer for 6 minutes.
Stir in Brussels sprouts and continue cooking until the chicken is cooked through, about 2 minutes or more.
Divide among individual bowls and top with the scallions.
