6 cups water
1 ½ tsp. salt
1 ½ cup cornmeal
3 Tbl. Butter cut into large chunks
Ground Pepper

When water comes to a boil, add salt, then pour the cornmeal from a measuring cup into the water in a very slow stream, all the while stirring in a circular motion with a wooden spoon to prevent clumping. Reduce heat to the lowest setting and cover. Cook, vigorously stirring polenta once for 10 sections every 5 minutes and making sure to scrape clean the bottom and corners of the pot until polenta has lost its raw cornmeal taste and becomes soft and smooth, about 30 minutes. Stir in butter, season with salt and pepper to taste and serve immediately.
